To make this recipe we will first melt the caramels with the chocolate wafer melts.
After the melted ingredients have set, we will form the truffle balls. Lastly, we will coat and top the truffles.

- Caramels. Using premade caramels makes this an easy recipe and eliminates the need for a candy thermometer (yay!).
- Heavy Cream. Used to smooth the melted ingredients out.
- Chocolate Melting Wafers. Melted with the caramels to make the tasty center of the candy,
- Chocolate Chips. Dark chocolate chips are preferred as this will be used for the coating.
- Vegetable Shortening. Coconut oil can alternatively be used.
- Coarsely Ground Sea Salt. Adding the salty touch to these truffles.
How to make Salted Caramel Truffles
Makes 30 truffles

Step One: prepare.
Prepare a square baking that will be used to set the filling in. Wax paper, foil, or greasing can work. Remove an wrapping from the caramels.
Step Two: make the caramel chocolate center.
In a double boiler or using a microwave safe bowl, melt together the caramels, heavy cream and chocolate melting wafers. Stir the ingredients as they melt (constant on stove or every 20 second using microwave). Then transfer the mixture to the prepared baking dish and refrigerate until set (about an hour).
Step Three Make the truffles.
- Once the refrigerated mixture has set, use a scoop or large spoon to scoop up the individual truffles and roll them into balls, placing the balls on a wax paper lined (or silicon mat) rimmed baking sheet.
- Freeze the formed balls until they are set (about an hour).
- To coat the truffle balls, use a microwave-safe bowl to melt the chocolate chips and the vegetable shortening (or coconut oil). Stop to stir the mixture every 20 seconds until smooth and melted.
- Use a candy dipping tool or spoons to dip the truffle balls in the melted chocolate.
- Add any desired topping including the salt and allow the chocolate to harden and cool before enjoying.
