This is a simple recipe for making holiday sandwich cookies.
These sandwich cookies have been inspired by the holiday grinch character.
To make these cookies we will first bake the green cookie portion.
When the cookies are cooling we will add the heart.
Lastly, once the cookies have fully cooled, we can add the filling to make them into sandwich cookies.
Ingredients needed to make grinch cookies.
- Flour. The structural base of the cookies.
- Ginger and Cinnamon. Ground ginger and cinnamon make this a flavorful holiday choice.
- Baking Soda. Added as the leavener.
- Butter. Your butter should be softened to room temperature.
- Brown sugar and regular granulated sugar. For sweetening the cookies.
- Molasses. This will make our cookies taste more moist and rich for the season.
- Green Food Coloring. For color.
- Egg . Your egg should be at room temperature.
- Edible red hearts . Your choice in size.
- Powdered Sugar and Vegetable Shortening or cream cheese, For the center filling.

How to make Grinch Inspired Ginger Sandwich Cookies
Prep Time: 20 minutes
Bake Time: 10 minutes
Idle Time: 15 minutes
Step One: prepare.
Preheat your oven to 350. Prepare two baking sheets for nonstick. I like to use parchment paper for a recipe like this one.
Step Two: make the cookies.
- In a medium bowl, use a whisk or a fork to mix together the flour, ginger, and baking soda.
- Next, in a mixing bowl, beat together the butter and the two sugars until creamy. Then beat in the molasses, egg, and food coloring.
- Add half of the dry ingredients to the bowl, mix, scrape down the sides of the bowl, and then mix in the remaining dry ingredients to the mixing bowl.
- Use a two inch cookie scoop to scoop out the dough, roll the dough into balls, and then press the balls into the baking sheets.
- Bake the cookies for 10 minute or until the edges are crisp. The allow the cookies to cool for 15 minutes on the baking sheets before transferring to a cooling rack. While the cookies are cooling, press an edible heart into the center of half of the cookies.
