    2. Lining your baking pan or dish with parchment paper that hangs over the sides will make it easier to remove the set bars for slicing.
    3. My recipe calls for heating the ingredients using a microwave. This recipe can be made on a stove top if desired, using a double boiler for best results.
    4. If your chocolate chips seem to be heating unevenly you can stir in a small amount of coconut oil to help smooth it out.
    5. Feel free to omit the nuts or use another kind of nut for a salty crunch.
    6. If you have trouble slicing your bars try heating the knife under warm water- drying the knife off before slicing.

    How to make No Bake Rocky Road Candy

    Prep Time: 15 minutes .
    Servings: 32 pieces or bars .

    1. Prepare. Line a 9X13" pan or dish with parchment paper or foil. You can give this a quick spray with nonstick as well.
    2. Peanuts and Marshmallows. Place your peanut and mini marshmallows into a large bowl. Use a large spoon or similar item to mix the ingredients together.
    3. Melt. In a large microwave-safe bowl, melt together your chocolate chips and butter, stopping to stir every 30 seconds, until smooth and melted.
    4. Milk. Carefully remove the bowl from the microwave and stir in your condensed milk.
    5. Combine. Add the ingredients from the first bowl (marshmallows and peanuts) to the bowl with the melted chocolate and use a rubber spatula or similar item to fold the ingredients together so that chocolate mixture is completely coating the nuts and marshmallows.
    6. Transfer. Transfer the mixture to your prepared baking dish and use your rubber spatula to evenly spread the mixture out.
    7. Chill. Refrigerate the mixture until set- about two to two and a half hours. Then use the parchment paper to lift the bars from the baking dish and slice into servings.

    Expert Tip👉 When placing the mixture into the baking dish avoid pressing the ingredients too hard with your hands as this can ruin the fudgy texture of these bars. Instead, you can use the backside of your rubber spatula to gently push the mixture in place.

    How to store Rocky Road Bars

    Once your bars have fully set and have been sliced, they can be stored in an airtight container. When properly stored, the bars should keep for up to five days at room temperature, up to a week when refrigerated, or up to a few months when frozen. If you store your bars in layers, make sure that you have parchment paper or wax paper between the layers.

    • 14 oz Sweetened Condensed Milk
    • ½ tsp Vanilla Extract.

    Instructions
