- Prepare. Preheat your oven to 400f and prep your baking dish for nonstick.
- Crust. Unroll the pie crust and cut it so that it can fit into the bottom of the baking dish. I like to place the dish on top of the dough and trace it with a knife or wheel cutter. Press the crust into the bottom of the baking dish and then use a fork to poke holes in the crust a few times (this helps the air escape while baking). Bake the crust until golden brown (about 10 minutes).
- Heat. In a saucepan over medium heat, melt together the corn syrup, brown sugar, evaporated milk, white chocolate chips, and maple syrup, stirring or whisking constantly, until melted together. Then remove the mixture from the heat and stir in your vanilla extract.
- Transfer. Carefully transfer the heated mixture to your prepared baking dish, evenly spreading it out. Then top the mixture with your pecans.
- Set. Let the fudge cool to room temperature and then place it into your refrigerator to fully set. Once the fudge has fully set you can cut it into squares and serve.

Tips for making the best pecan fudge.
Roasted or toasted pecans add to the flavor in this fudge. You can easily toast pecans by evenly spreading them over a rimmed baking pan and baking at 350f for five to ten minutes or until browned, stopping to stir them around after five minutes.

- I mentioned that using white chocolate chips that are made with cocoa butter is essential to making a good fudge. When white chips are not made with cocoa butter they do not melt evenly and consistently enough for fudge.
- My fudge was set in a baking dish that was greased. You can make your fudge in a square baking pan (it does not really matter in this recipe) or use parchment paper instead. If you let the parchment paper hang over the edges of the pan or dish you will be easily able to life if out to cut the fudge into servings.
- My ingredients were heated over the stove. This recipe can also be made in a microwave, stopping to stir the ingredients regularly.
