How to make Rice Krispie Scotcheroos
Prep Time: 20 minutes .
Cook Time: 10 minutes .
Servings : 15, depending on how they are cut. .
How to Serve: Serve as is with a favorite beverage, such as milk, on the side.
Notes: You will need a 9x13 inch baking dish or pan to make this recipe.
- Prepare. Prepare your pan for nonstick. Parchment paper works well. Also, place your cereal in a large mixing bowl.
- Stovetop. In a medium saucepan on medium-high heat, melt together the corn syrup and sugar, stirring constantly.
- Peanut Butter. Once the ingredients from the last step have melted, remove the saucepan from the heat and carefully whisk in the peanut butter. Once combined, fold the warm ingredients into the Rice Krispies in the large bowl until the cereal is well coated.
- Transfer. Transfer the ingredients from the mixing bowl to your prepared baking dish. Then use a rubber spatula or similar item to press the mixture into the the dish.
- Topping. In a microwave-safe bowl, heat the chocolate chips and the butterscotch chips for 30 second increments, carefully stopping to stir, until melted. This step can also be done on the stovetop using the double-boiler method. Pour the melted ingredients over the cereal mixture and use the backside of a spoon or similar item to spread to smooth the melted ingredients out, covering all of the cereal bars.
- Serve. Allow the bars to fully set before slicing.

Tips for making the best Scotcheroos .
Rice Krispie Cereal is the standard cereal used in this recipe. You can however, use an off-brand version or a flavored krispie cereal.

- For bars that are thicker, use a 9x9" pan.
- If you use parchment paper to line your pan, leave a bit extra of the paper hanging over the sides. This will make it easier to lift the set treasts out the pan for slicing.
- It can take up to a couple of hours for the bars to fully set for slicing. You can try refrigerating the bars for part of the time to speed up the setting process, however they will need to get to room temperature to slice.

How to store Scotcheroos.
Once they have fully set, scotcheroos should be stored in an airtight container. When properly stored, scotcheroos should keep for up to four days at room temperature. Refrigerating the bars can affect the texture, these bars are best at room temperature.
