What is Chocolate Chip Cookie Pie ?

Chocolate Chip Cookie Pie is basically chocolate chip cookie batter that is baked in a pie crust.

I really like how this recipe combines together two favorite desserts- pies and cookies.

Ingredients needed to make Cookie Pie with Chocolate Chips.

    • For the crust you will need sandwich cookies and melted butter.
    • Sugar. Regular granulated sugar sweetens this pie while helping it stay moist and soft.
    • Butter. Your butter should be melted. Unsalted butter is preferred.
    • Flour. All purpose flour was used to make my pie.
    • Eggs. Your eggs should be beaten.
    • Pecans. The pecans should be chopped.
    • Chocolate Chips. Milk chocolate chips are softer, adding to the 'gooey' texture.
    • Vanilla Extract. Added for a bit of flavor balance.

Tips for making the best chocolate chip cookie pie.

While the filling in this pie is 'chocolate chip cookie' based, it is not exactly the same as actual cookie batter will come with a leavening agent (baking soda in most cases). Because this pie is meant to be more dense than cookies, it is best to use the filling recipe provided and not use a premade or other kind of cookie batter.

    More helpful tips for you.

    1. Milk chocolate chips are used in this recipe because they are softer and when served warm in the pie, add to the flavor and texture of this dessert. Dark chocolate, for example, will hold on to its structure differently.
    2. Sandwich cookies are used to make the crust in this recipe as they provide both the crispy cookie and the soft and sugary center which both sweetens and helps to bind the ingredients together.
    3. The easiest way for you to crush your cookies to make the crust is to simply place them into a zip top bag and use a rolling pin to crush them. Crushing your cookies using a food processor can also do the trick!
    4. You could use a premade crust however, your making time may vary so keep an eye on your pie while it bakes in your oven.
    5. When you are mixing the filling ingredients, mix them until they are just combined. Over-mixing the cookie batter can affect the texture of the filling.
    6. Your cookie pie is done baking when the top is golden brown and slightly cackled. Using a toothpick to test for doneness may give you a false result as there is melted chocolate involved.

How to make Chocolate Chip Cookie Pie

    Prep Time: 7 minutes .
    Bake Time : 45 minutes .
    Servings: 8 servings .

    1. Prepare. Preheat your oven to 350. Also, prep a pie plate as desired for nonstick.
    2. Crust. Start by crushing the sandwich cookies using a food processor or by using the zip top bag method. Then place the cookie crumbs into a large mixing bowl and blend in your melted butter. When the ingredients become thick and somewhat sticky you can press them into your prepared pie dish and bake for eight to 10 minutes.
    3. Filling. To make the filling, simply combine the ingredients together until just combined. Then you can transfer the ingredients to a somewhat to fully cooled crust.
    4. Bake. Bake your pie for 40-45 minutes or until the top is golden brown and slightly crackled.
    5. Serve. Let the pie set for a few minutes to make it easier to cut into slices.

Expert Tip 👉 The crust can be made ahead of time and refrigerated for up to three days or frozen for up to three months. On the other hand, this recipe can also be made with a store bought pie crust, skipping the first step in this recipe.

How to store Chocolate Chip Cookie Pie

Once your pie has fully cooled it can be stored in an airtight container. When properly stored, chocolate chip cookie pie should keep for up to three days at room temperature before it starts to dry out. You can also freeze the pie for up to three months and reheat it when thawed out.
