    My muffins were made with a basic and inexpensive box of cornbread mix. Any brand should work in this recipe.

    Here is what you will need.

    • Cornbread mix. Jiffy cornbread muffin mix was used to make my muffins.
    • Egg. Use an egg that is at room temperature for optimal blending.
    • Butter. The butter should be melted.
    • Milk. You can use regular milk, buttermilk, or even a non-dairy milk. A thicker or fuller fat milk will make these muffins more moist.
    • Hot Dogs. Any kind of hot dog or similar sized sausage can work in this recipe. The hot dogs should be sliced.
    • Optional ingredients include cheese, sugar, salt, chopped onions or peppers, and seasonings to taste.

    2. In a large mixing bowl use a whisk to break up any lumps in your cornbread muffin mix.
    3. Add the remaining ingredients, except for the hot dogs, to the bowl and mix until the ingredients are just combined.
    4. Use a cookie scoop to fill the muffin cups ⅔rds of the way full.
    5. Next, place a hot dog piece into the center of each of the muffins.
    6. Bake the muffins for 10-12 minute sor until they turn golden brown.
    7. Allow the muffins to cool for a few minutes before serving.
